Herbs de Provence Recipes

Some spice blends are bold and spicy.

Some are smoky.

Some are sweet.

And some are simply beautiful.

Herbs de Provence is one of those blends.

It brings together fragrant herbs often associated with southern French cooking. Depending on the blend, herbs de Provence may include rosemary, thyme, savory, basil, oregano, marjoram, tarragon, fennel, and sometimes lavender. There is no single universal recipe for Herbs de Provence, but rather different versions.

At Gourmet Vanilla ’n Spice, we love this blend because it is versatile, elegant, and easy to use in both simple meals and special dinners.

It can make chicken taste cozy and roasted. It can make vegetables feel more special. It can brighten potatoes, fish, soups, dips, and dressings. It can bring a little French countryside feeling to an ordinary weeknight meal.

If you have a jar of Herbs de Provence and are not sure where to begin, these recipes and ideas are a great place to start.

What Does Herbs de Provence Taste Like?

Herbs de Provence are usually fragrant, earthy, herbal, savory, and slightly floral, depending on the ingredients used.

Rosemary and thyme bring warmth. Savory and oregano add depth. Basil and marjoram add gentle sweetness. Tarragon can bring a delicate anise-like note. Fennel can add brightness. Lavender, when included, adds a soft floral touch.

The blend is especially good with roasted meats, dressings, and cheeses.

How Much Should You Use?

For meats, start with about:

1 teaspoon Herbs de Provence per pound of meat

For vegetables, start with:

1 to 1½ teaspoons per large baking sheet of vegetables

For dips and dressings, start with:

½ to 1 teaspoon per cup

You can always add more, but you cannot take it back out once the lavender and rosemary decide to hold a meeting in your soup.

Cooking Tips

Rub dried herbs between your fingers before using to help release aroma.

Let herbs sit in oil, butter, dressing, or marinade for a few minutes before cooking.

Store herbs tightly closed in a cool, dark cabinet.

Avoid storing spices above the stove, where heat and steam can weaken flavor.

Use a lighter hand with fish and delicate sauces.

Use more generously with roasted meats, potatoes, stews, and vegetables.

The Bottom Line

Herbs de Provence is a beautiful blend to keep in the kitchen.

It brings warmth, aroma, and French-inspired flavor to chicken, pork, fish, potatoes, vegetables, soups, dips, dressings, and more.

It is simple enough for everyday meals, but special enough for company.

At Gourmet Vanilla ’n Spice, we love blends that make cooking easier, prettier, and more flavorful.

Herbs de Provence does exactly that.

One jar. Many recipes. A little taste of Provence.
